Salmon Asparagus Frittata
Makes: 4 servings | Prep Time: 5 minutes | Cook Time: 20 minutes
1 can NATURAL SEA Wild Red Sockeye Salmon unsalted
8 large eggs
4 large egg whites
1 cup asparagus, thinly sliced lengthwise
1/2 cup of aged cheddar cheese
1/2 teaspoon smoked paprika
Sea salt and pepper to taste
Top with fresh arugula, spinach or microgreens
- Preheat oven to 400.
- Whisk together eggs, milk, paprika, salt, and pepper.
- Pour into skillet and cook for 5-6 minutes until bottom is set.
- Add asparagus and cheese. Transfer to the oven and bake for another 10-12 minutes until puffed up, doesn't jiggle, and is slightly browning.
- Remove and let cool slightly before serving.
