
Albacore Tuna Buddha Bowl

Ingredients
1 can NATURAL SEA Wild Albacore Tuna, drained
1 1/2 cups cooked and cooled rainbow quinoa
1 hard cooked egg, halved
1/4 yellow pepper, julienned
1/4 cup shredded red cabbage
1/4 cup diced cucumber
1/4 cup drained and rinsed garbanzo beans
1/4 cup castelvetrano olives
1/4 cup drained and rinsed garbanzo beans
1/2 hot red pepper (or jalapeno) thinly sliced
For the vinaigrette:
1 tbs evoo
1 tbs lemon juice
1/4 tsp dijon mustard
1/4 tsp local honey
fresh tarragon or herb of choice
sea salt and black pepper to taste
Directions
- Put your ingredient into a small bowl.
- Remove the tuna from the can, drain it and place it in the middle of the bowl.
- Arrange the rest of the ingredients around the edges of the bowl.
- Whisk together vinaigrette ingredients and drizzle over everything.
- Sprinkle with black sesame seeds, hemp seeds, or fresh herbs.
